Pastéis de Nata (Portuguese Egg Custard Tarts)

These little crisp tarts filled with a sweet custard are one of the most simplest and nicest things you’ll ever eat…yes..ever…I promise!

If you want to make your own puff pastry then go for it, I just used shop bought for this recipe as to be honest…I just didn’t want to wait any longer to get them in the oven 😂. This recipe should make around 20 little tarts.

Ingredients

Sugar syrup

  • 200g caster sugar
  • 1 cinnamon stick
  • Rind of 1 lemon

Egg custard

  • 20g plain flour
  • 15g cornflour
  • 300ml milk
  • 5 egg yolks
  • About 1 kg of puff pastry

Method

Start by making a sugar syrup by boiling the sugar, lemon and cinnamon stick with 200ml of water. Once boiling leave for 3 minutes then take off the heat, discard the lemon peel and cinnamon stick and leave to cool.

Heat the milk in a pan and slowly bring to the boil. Once boiling move to one side and whisk in the cornflour and plain flour until you have a smooth mixture.

Then slowing whisk in the cooled sugar syrup again until fully combined and smooth.

Leave the milk mixture to cool slightly, if it is too hot then you will end up with scrambled egg when adding the yolks. Whisk in the yolks until again you have a nice smooth custard.

Roll out your pastry until it’s around 1cm in thickness. Using a 3cm cutter cut out your discs, you should need around 20 in total.

Place your discs inside the muffin tin pulling the pastry up slightly so it just about reaches the top of the tin.

Fill the pastry up with your egg custard mix leaving a small space at the top.

Place your tarts in a preheated oven at 230c and cook for 20 mins, as they cook you will see the mixture starting to bubble and it will get little burnt areas on the top, don’t be tempted to turn down the oven or take them out as this is exactly what should happen and will give the tarts their famous glazed rustic look.

Remove from the oven and leave to cool slightly before removing from the tin. And there you have it…the best little custard tarts you’ll ever taste! Only 3 of us in this house so we did say we would deliver some to friends and family to try but urrmmmm we just haven’t had the time 🙄😏 enjoy guys !
